Great wine is a matter of balance and their passion for subtle, elegant and harmonious flavours in wine, is well respected. Geoff believes that maturation, both in oak barrel and in bottle, in their cellars prior to release, plays an important role in achieving this aim.

松江的優良水質造就島根成為日本酒酒庫,在縣內就密集分佈十幾家以上知名酒造廠。位於松江市區的「李白」創社於明治年間(1882),釀酒用米部分來自島根本地,如果是最高等級的大吟釀,會特別選用酒米之王「山田錦」來釀造。借用中國詩人之名,李白的包裝與命名,處處充滿詩意,像是「兩人對酌」系列。因為對於品管嚴格控制,李白酒造相當有自信,釀造出來滴滴都是精醇的日本好酒
